Research interests

Dr. Beta's research focuses on functional foods with investigations being conducted in the following areas:

  • Bioactive and nutrient profiles in foods
  • Phytochemicals in health promotion
  • Grain-based functional foods
  • Food processing and bioaccessibility of phytochemicals

Current research projects

  • Food matrix effects on the release of phytochemicals during digestion
  • Bioaccessibility of lipo-soluble antioxidant nutrients assessed from cereal grains
  • Bioactive starch films for biodegradable food packaging
  • Physical and chemical properties of starches from oats
