Research interests

Dr. Koksel's research focuses on processing of plant-based foods. Her research interests include:

  • Electromagnetic and mechanical analyses of foods
  • Empirical and fundamental food rheology
  • Microstructure of aerated puffed foods
  • Processing of plant-based meat and dairy-alternatives

Current research projects

  • In-line structural, textural and nutritional quality monitoring and manipulation during processing of plant-based meats
  • Understanding the mechanisms associated with quality creation in protein rich plant based aerated foods during processing
  • Effects of extrusion cooking and the use of oxidizing/reducing agents on the techno-functional properties of pulse flours
