Research interests

Dr. Eskin's research focuses on:

  • Edible oils
  • Canola oil
  • Polyphenols
  • Food carbohydrates
  • Food enzymes

Current research projects

  • Polyphenolic compounds in both canola and mustard with particular attention to sinapic acid and canolol
  • The efficacy of the polyunsaturated fatty acid, DHA, to ameliorate the effects of alcohol in fetal alcohol syndrome
