Research interests

Dr. Malalgoda's research focuses on grain chemistry and processing quality, and how grain‐based ingredients can be used to produce healthy, high quality and safe food. Her research program specifically investigates the following:

  • Physicochemical properties of grain proteins and starch
  • Functionality and processing quality of grain proteins and starch
  • Biological activity of grain biomacromolecules
