Research Interests:

Diet and Insulin Resistance:

Effects of dietary fatty acids (conjugated linoleic acid, omega-3) on insulin resistance, adipokines and adipose function.

Insulin-mimetic properties of novel bioactive compounds in buckwheat.

Nutrition, Antioxidant and Immune Defense:

Effects of dietary zinc on T-lymphocyte development and zinc-finger proteins involved in cell signaling.

Protective effects of zinc supplementation during inflammation and heavy metal toxicity.
