Research

Research interests

Dr. Taylor investigates the effects of various dietary components on obesity, insulin resistance and vascular health using animal models and human studies, specifically:

  • Omega-3 fatty acids
  • Conjugated linoleic acid
  • Plant-based bioactives in crops such as buckwheat and pulses

The effects of zinc on antioxidant and immune defense is another research interest.
