Research Interests: Postharvest handling and storage management to ensure processing quality of potatoes for french fries. Prediction of processing quality by sugar analysis and storage management for optimum processing quality. Sprout inhibitor application and the effects of ethylene contamination on potato processing quality. Currently serves in a consulting capacity to the potato program in the Department of Plant Science.

Research Interests: The application of established scientific concepts to understand how changes in the physical and chemical properties of food materials occur as they are subjected to heat and mass transfer during processing operations, particularly the changes in their mechanical properties that affect textural quality.
